Ingredients

  • 2 cups fresh spinach
  • 1 cup cucumber, chopped
  • 1 medium green apple, cored and diced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1-inch piece of ginger root, peeled
  • 2 celery stalks, chopped
  • 1 cup kale leaves, stems removed
  • 1 cup pineapple chunks (fresh or frozen)
  • 1/4 cup fresh mint leaves
  • 1 cup coconut water (unsweetened)

Instructions

  1. Wash all the greens thoroughly to remove dirt.
  2. Chop cucumber and celery into small pieces for easy blending.
  3. Core the apple and cut it into chunks; peel ginger and chop.
  4. Add all ingredients to a blender or juicer along with coconut water.
  5. Blend until smooth. If too thick, add more coconut water or lime juice to adjust consistency.
  6. Pour into tall glasses over ice and garnish with mint leaves.
