Description

These colorful stuffed eggs are a vibrant and flavorful appetizer that will elevate any gathering. Ingredients

  • 6 large hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley or chives
  • 1/4 cup diced bell peppers (any color)
  • 2 tbsp chopped olives (optional)
  • Paprika for garnish

Instructions

  1. Boil the eggs in water for 10-12 minutes. Transfer to an ice bath to cool.
  2. Once cooled, peel the eggs under running water and slice them in half lengthwise. Place yolks in a bowl.
  3. Mash yolks with mayonnaise and Dijon mustard until smooth. Stir in salt, pepper, and herbs.
  4. Fold in diced bell peppers and olives for color and flavor.
  5. Fill each egg white half with the mixture using a spoon or piping bag.
  6. Sprinkle paprika on top before serving.
