- 2 cups cooked shredded chicken (preferably rotisserie)
- 1/2 cup buffalo sauce
- 4 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 2 green onions (chopped)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds; place them upright in a baking dish.
- In a large bowl, mix together shredded chicken, buffalo sauce, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Generously fill each bell pepper with the chicken mixture and pack lightly.
- Top each stuffed pepper with shredded cheddar cheese.
- Cover the dish with foil and bake for 25 minutes; then remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
