Description

Warm up your evenings with this Comforting Beef Bourguignon, a classic French dish featuring tender beef simmered in a rich red wine sauce. Enhanced with earthy mushrooms, sweet pearl onions, and crispy bacon, this hearty meal is perfect for special occasions or a cozy night at home. The deep flavors meld beautifully, creating an irresistible aroma that will make your kitchen the heart of your home.

Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 cup dry red wine
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 medium carrots, peeled and chopped into thick rounds
  • 1 cup pearl onions
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp Herbs de Provence (or thyme)
  • 4 oz bacon lardons
  • 2 tbsp olive oil
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef until browned on all sides (approximately 4-5 minutes per side). Remove and set aside.
  2. In the same pot, add bacon lardons and cook until crispy (about 4 minutes).
  3. Add chopped carrots and pearl onions; sauté until softened (about 5 minutes).
  4. Stir in garlic and mushrooms; cook until mushrooms shrink (around 3-4 minutes).
  5. Deglaze with red wine, scraping up any browned bits from the bottom of the pot.
  6. Return seared beef to the pot along with beef broth and Herbs de Provence. Bring to a gentle boil.
  7. Reduce heat to low, cover tightly, and let simmer for about two hours until meat is tender.
  8. Serve over creamy mashed potatoes or crusty bread for a complete meal.
