  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut into pieces
  • 1 medium zucchini, diced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent.
  2. Add carrots and celery; cook for another 5 minutes.
  3. Stir in the diced tomatoes with their juice and pour in vegetable broth. Bring to a gentle boil.
  4. Add thyme, basil, salt, and pepper; simmer uncovered for about 20 minutes until vegetables are tender.
  5. In the last 10 minutes of cooking, add green beans and zucchini.
  6. Taste and adjust seasoning as needed before serving.
