  • 4 medium Yukon Gold potatoes, diced
  • 2 cups fresh lacinato kale, chopped
  • 1 sweet yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop potatoes, onion, and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  3. Add minced garlic and diced potatoes; sauté for an additional 2 minutes until fragrant.
  4. Pour in vegetable broth to cover the potatoes. Bring to a gentle boil, then reduce heat and simmer for 15 minutes or until fork-tender.
  5. Stir in chopped kale and cream/coconut milk; simmer for another 5 minutes until kale is wilted.
  6. Season with salt, pepper, and thyme before serving.
