  • 2 ripe avocados, halved and pitted
  • 1 cup fresh basil leaves
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (about 1 lemon)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Boil salted water in a large pot, then add pasta and cook until al dente according to package instructions. Reserve some pasta water before draining.
  2. Prepare the avocado sauce: In a blender, combine ripe avocados, basil leaves, minced garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.
  3. Add cheese: Mix in grated Parmesan cheese and blend again until incorporated.
  4. Combine: In a large bowl, toss drained pasta with avocado sauce. If the sauce is too thick, add reserved pasta water gradually until desired creaminess is achieved.
