  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh ricotta cheese
  • 8 oz penne pasta
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the penne pasta until al dente according to package instructions.
  2. In a skillet over medium heat, add olive oil and diced chicken breasts. Cook until golden brown and no longer pink inside (6-8 minutes), then remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant (about 30 seconds), then add fresh spinach and cook until wilted.
  4. Lower the heat and stir in ricotta cheese, adding reserved pasta water as needed for creaminess. Mix in grated Parmesan.
  5. Return cooked chicken and drained pasta to the skillet, tossing everything together for about 2-3 minutes.
  6. Season with salt and pepper before serving, adding extra Parmesan on top.
