- 1 cup fresh ricotta cheese
- 8 oz penne pasta
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot and cook the penne pasta until al dente according to package instructions.
- In a skillet over medium heat, add olive oil and diced chicken breasts. Cook until golden brown and no longer pink inside (6-8 minutes), then remove from skillet.
- In the same skillet, sauté minced garlic until fragrant (about 30 seconds), then add fresh spinach and cook until wilted.
- Lower the heat and stir in ricotta cheese, adding reserved pasta water as needed for creaminess. Mix in grated Parmesan.
- Return cooked chicken and drained pasta to the skillet, tossing everything together for about 2-3 minutes.
