  • Zest and juice of 2 oranges

Instructions

  1. In a medium saucepan over medium heat, combine cranberries, sugar, and water. Cook for 10-15 minutes until cranberries burst.
  2. Remove from heat; stir in gelatin until fully dissolved.
  3. Add orange zest and juice to the cranberry mixture.
  4. Pour the mixture into a lightly greased bundt pan. Chill for at least 4 hours or overnight until set.
  5. To serve, run a knife around the edges and invert onto a platter. Garnish with mint leaves and pine nuts before serving.
