  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium sweet potatoes (about 1 lb)
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 3 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh cilantro or parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces. Toss them with 2 tbsp olive oil, salt, pepper, and cumin until coated.
  3. Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender.
  4. While the sweet potatoes roast, season the chicken breasts with remaining olive oil, smoked paprika, garlic powder, salt, and pepper; marinate for about 10 minutes.
  5. Heat a skillet over medium-high heat and sear the marinated chicken breasts for about 5-7 minutes per side until charred and cooked through.
