  • 1 cup grated carrots (about 2 medium carrots)
  • ¾ cup chopped walnuts or pecans
  • ½ cup dried raisins or cranberries
  • 2 large eggs
  • ⅓ cup vegetable oil or unsweetened applesauce
  • 1 tsp vanilla extract

Instructions
