- 2 large sweet potatoes, peeled and cubed
- 1/4 cup pure maple syrup
- 1/2 cup chopped walnuts, toasted
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish with butter.
- In a bowl, combine the cubed sweet potatoes with melted butter, maple syrup, cinnamon, salt, and pepper. Toss until evenly coated.
- Spread the mixture in the prepared baking dish and bake for 25 minutes or until tender and caramelized.
- While the sweet potatoes roast, toast the walnuts in a dry skillet over medium heat for 3-5 minutes.
- Once done, sprinkle the toasted walnuts over the sweet potatoes before serving.
