  • ½ cup all-purpose flour
  • ¾ cup brown sugar (light or dark)
  • ½ cup unsalted butter (melted)
  • 8 oz plain cream cheese (softened)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup berries (blueberries or raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a bowl, combine rolled oats, flour, brown sugar, and melted butter until crumbly. Press half into the prepared pan for the crust.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add granulated sugar while mixing. Incorporate eggs one at a time and mix in vanilla extract.
  4. Gently fold berries into the cheesecake mixture. Pour over the crust and sprinkle remaining oat mixture on top.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Allow to cool completely before slicing into bars.
