  • 1.5 lbs Yukon Gold potatoes, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and spray a baking dish with non-stick cooking spray.
  2. 2. In a large skillet over medium heat, add olive oil. Season the chicken breasts with salt and pepper and cook until golden brown (about 6-7 minutes per side) until they reach an internal temperature of 165°F (75°C). Remove from skillet.
  3. 3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and chicken broth; stir to combine.
  4. 4. Add chopped potatoes to the creamy mixture and simmer for about 10 minutes until tender.
