  • 4 medium potatoes (about 1 lb), diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp curry powder
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • Salt & pepper to taste
  • Fresh cilantro (optional), for garnish

Instructions

  1. Prepare your ingredients by peeling and dicing the potatoes and chopping the onion.
  2. In a large pot over medium heat, add oil and sauté the onions until translucent. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in curry powder with the potatoes; toast for about 1 minute to enhance flavors.
  4. Pour in the vegetable broth to cover the potatoes completely. Bring to a boil, then reduce heat and simmer for about 15 minutes until fork-tender.
  5. Remove from heat and blend until smooth using an immersion blender. Stir in coconut milk for creaminess.
