  • 1 lb dry-packed scallops
  • 2 fillets (about 8 oz each) of mild white fish (like cod or haddock)
  • 4 cloves garlic (minced)
  • Juice of 1 lemon (about 2 tbsp)
  • ¼ cup fresh basil (chopped)
  • ¼ cup fresh parsley (chopped)
  • 4 tbsp butter or olive oil
  • ½ cup dry white wine (optional)

Instructions

  1. Rinse the shrimp and scallops under cold water; pat dry.
  2. In a large skillet over medium heat, melt butter until bubbly. Add minced garlic and sauté for about one minute until fragrant. Add chopped herbs and mix well.
  3. Carefully add shrimp, scallops, and fish fillets to the skillet without stirring for three minutes until golden brown on one side.
  4. Pour in white wine (if using) and lemon juice; stir gently and cook for an additional five minutes until seafood is opaque and fully cooked.
  5. Remove from heat, garnish with extra herbs if desired, and serve immediately with crusty bread or over pasta.
