  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (mix of red and green), chopped
  • 28 oz canned crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tbsp chili powder
  • 2 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions and bell peppers until softened (about 5 minutes).
  2. Increase heat to medium-high; add ground beef and cook until browned, breaking it apart as needed.
  3. Stir in minced garlic, chili powder, cumin, salt, and pepper; cook until fragrant (about 1 minute).
  4. Add crushed tomatoes and kidney beans; stir to combine.
  5. Reduce heat to low and cover the pot; let simmer for at least 30 minutes.
