- 1-inch piece fresh ginger, grated
- 1 tsp cumin seeds
- 2 tsp coriander powder
- ½ tsp turmeric powder
- 2 green chili peppers, chopped (adjust to taste)
- Salt to taste
- Pepper to taste
- 2 tbsp vegetable oil or ghee
- Water as needed
Instructions
- Heat the oil in a large pan over medium heat. Add cumin seeds and toast until fragrant (about 30 seconds).
- Add chopped onions, minced garlic, and grated ginger. Sauté until onions are translucent.
- Stir in diced potatoes along with coriander powder, turmeric, salt, pepper, and chopped green chilies. Cook for about 5 minutes.
- Gradually fold in the washed spinach until wilted and well combined.
- Pour in enough water to cover the potatoes and simmer covered for 15–20 minutes until fork-tender.
- Adjust seasoning if needed; mash some potatoes against the pan's side for creaminess.
- Serve hot with naan or rice.
