Description

Twice Baked Sweet Potatoes are a creamy and comforting side dish that will delight your taste buds. This recipe combines sweet, fluffy potatoes with rich toppings for a delicious experience.


Ingredients

  • 2 medium sweet potatoes
  • 3 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (divided)
  • 2 green onions (sliced)
  • Salt and pepper to taste
  • Optional toppings: bacon bits or additional cheese

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in them with a fork.
  2. Bake sweet potatoes directly on the oven rack or on a lined baking sheet for 45-60 minutes until tender.
  3. Allow to cool slightly, then slice each potato in half lengthwise and scoop the flesh into a bowl.
  4. Mix the scooped sweet potato with butter, sour cream, half of the cheese, green onions, salt, and pepper until smooth.
  5. Spoon the mixture back into the potato skins, topping with remaining cheese.
  6. Return to the oven for an additional 15-20 minutes until heated through and cheese is bubbly.
