- 2 medium sweet potatoes
- 3 tablespoons unsalted butter
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese (divided)
- 2 green onions (sliced)
- Salt and pepper to taste
- Optional toppings: bacon bits or additional cheese
Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in them with a fork.
- Bake sweet potatoes directly on the oven rack or on a lined baking sheet for 45-60 minutes until tender.
- Allow to cool slightly, then slice each potato in half lengthwise and scoop the flesh into a bowl.
- Mix the scooped sweet potato with butter, sour cream, half of the cheese, green onions, salt, and pepper until smooth.
- Spoon the mixture back into the potato skins, topping with remaining cheese.
- Return to the oven for an additional 15-20 minutes until heated through and cheese is bubbly.
