  • 1 lb fresh shrimp, peeled
  • 1 cup corn grits
  • 4 cups water
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • ½ lemon, juiced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Bring 4 cups of water to a boil in a medium saucepan. Gradually whisk in 1 cup of corn grits to avoid lumps.
  2. Lower the heat and stir in 1 cup heavy cream and 4 tbsp butter. Cook until thickened (about 15 minutes), stirring occasionally.
  3. Season the grits with salt and pepper; keep warm.
  4. In a skillet over medium heat, melt 2 tbsp butter and add the shrimp along with 2 tbsp Cajun seasoning. Cook for about 3-5 minutes until pink and opaque.
  5. Add minced garlic during the last minute of cooking; finish with a squeeze of lemon juice.
  6. Serve creamy grits topped with sautéed shrimp and garnish with green onions.
