  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder (adjust to taste)
  • 1 cup frozen corn
  • 2 cups low-sodium vegetable broth
  • ¼ cup fresh cilantro, chopped
  • ½ cup shredded cheese (optional)

Instructions

  1. Prep your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic until fragrant.
  3. Add the diced bell peppers and corn to the skillet along with cumin and chili powder; stir well to combine.
  4. Pour in the rinsed quinoa and vegetable broth; bring to a boil. Once boiling, reduce heat to low, cover tightly, and simmer for about 15-20 minutes or until all liquid is absorbed.
  5. Remove from heat and fluff quinoa gently with a fork. Stir in black beans and chopped cilantro; add cheese if desired.
