- 1 tsp chili powder (adjust to taste)
- 1 cup frozen corn
- 2 cups low-sodium vegetable broth
- ¼ cup fresh cilantro, chopped
- ½ cup shredded cheese (optional)
Instructions
- Prep your ingredients by chopping the vegetables and mincing the garlic.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the diced onion until translucent, then add minced garlic until fragrant.
- Add the diced bell peppers and corn to the skillet along with cumin and chili powder; stir well to combine.
- Pour in the rinsed quinoa and vegetable broth; bring to a boil. Once boiling, reduce heat to low, cover tightly, and simmer for about 15-20 minutes or until all liquid is absorbed.
- Remove from heat and fluff quinoa gently with a fork. Stir in black beans and chopped cilantro; add cheese if desired.
