  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and lemon zest.
  2. In a separate bowl, mix ricotta cheese, milk, eggs, and vanilla extract until smooth.
  3. Gently pour the wet mixture into the dry ingredients and fold until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of batter per pancake onto the skillet.
