  • 1 cup whole milk (or buttermilk)
  • 2 tsp vanilla extract
  • 1 box (3.9 oz) chocolate pudding mix (instant)
  • 1 cup heavy cream
  • ¼ cup Dutch process cocoa powder (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. Add eggs, melted butter, milk, and vanilla to the dry ingredients; mix until smooth.
  4. Pour batter evenly into prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
  5. While cakes cool, prepare chocolate pudding as per package instructions and chill.
  6. Once cooled, layer one cake with pudding filling; stack the second layer on top.
  7. Whip heavy cream with Dutch cocoa until fluffy and frost the entire cake.
