  • 2 ribeye steaks (8 oz each)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • ½ cup beef broth (low-sodium)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Let the steaks rest at room temperature for 30 minutes before cooking.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Season both sides of the steaks with salt and pepper.
  3. Sear the steaks for about 4-5 minutes on each side until a crust forms. Flip gently using tongs.
  4. In the last minute of cooking, add minced garlic and butter, basting the steak with melted butter.
  5. Remove the steaks and let them rest. Lower heat, pour in beef broth, scraping up brown bits, and then stir in heavy cream.
  6. Simmer until thickened (3-5 minutes) and finish with chopped parsley before drizzling over sliced steak.
