  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 4 oz melted dark chocolate (high-quality)
  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 oz melted dark chocolate (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, vanilla extract, and melted chocolate until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold until combined without overmixing.
  5. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. For the frosting, beat butter until creamy; gradually add powdered sugar and melted chocolate until desired consistency is reached.
  8. Once cooled, layer cakes with frosting in between and cover the top and sides generously with frosting.
