  • 1 sheet puff pastry (thawed if frozen)
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • Icing sugar (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, granulated sugar, softened butter, one egg, vanilla extract, and cinnamon until smooth.
  3. Roll out the puff pastry on a floured surface into a 12-inch circle and place it on the prepared baking sheet.
  4. Spread the almond filling in the center of the pastry, leaving a one-inch border around the edges. Hide the fève if desired.
  5. Roll out another sheet of puff pastry and cover the filling. Pinch edges to seal tightly.
  6. Create decorative slits on top and brush with the second beaten egg mixed with water.
  7. Bake for 30-35 minutes or until golden brown and puffed.
