  • 1 cup heavy cream
  • 4 large eggs (room temperature)
  • 3/4 cup granulated sugar
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1/4 cup unsalted butter
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan and line with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth.
  3. In a separate bowl, whip heavy cream until soft peaks form; set aside.
  4. Whisk egg yolks and sugar in another bowl until pale and creamy.
  5. Fold melted chocolate into the egg mixture, then gently fold in whipped cream until just combined.
  6. Reserve some raspberries for decoration; fold remaining raspberries into the mousse mixture.
  7. Pour half of the mousse into the prepared pan and bake for 10-12 minutes until slightly set. Cool completely.
  8. Layer remaining mousse on top of the cooled base, smooth out, and refrigerate for at least 4 hours or overnight before serving.
