  • 1 cup unsalted roasted pistachios (plus extra for topping)
  • 1 cup fresh cremini or shiitake mushrooms, chopped
  • 16 oz full-fat cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter (for crust and sautéing)
  • 1 cup graham cracker crumbs
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and cinnamon. Press into the bottom of a springform pan.
  3. Bake the crust for 10 minutes until golden brown. Allow to cool.
  4. Sauté chopped mushrooms in melted butter over medium heat until softened (5-7 minutes). Set aside to cool.
  5. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy.
  6. Add eggs one at a time, mixing thoroughly after each addition. Stir in cooled mushrooms and crushed pistachios.
  7. Pour filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until slightly jiggly in the center.
  8. Let cool completely, then chill in the refrigerator for at least four hours before serving.
