Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy cream (cold)
  • ½ cup powdered sugar
  • 1 cup ladyfinger cookies (fresh)
  • 1 cup strong brewed coffee (cooled)
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew a cup of strong coffee or espresso and let it cool slightly.
  2. In a chilled bowl, whip the cold heavy cream until soft peaks form.
  3. In another bowl, mix the mascarpone cheese and powdered sugar until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture.
  5. Briefly dip ladyfingers into the cooled coffee and layer them in a dish.
  6. Spread half of the cheesecake filling over the ladyfingers, then repeat with another layer of soaked ladyfingers followed by the remaining filling.
  7. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
