- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 large fresh apples (preferably Granny Smith), peeled and sliced
- ¾ cup granulated sugar (adjust to taste)
- 24 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs (room temperature)
- 1 tsp cinnamon
- ½ tsp nutmeg (freshly grated for best flavor)
- ½ cup brown sugar (light or dark)
- 1 cup rolled oats
- ½ cup all-purpose flour
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a greased springform pan.
- In a skillet over medium heat, melt some butter and sauté sliced apples with sugar, cinnamon, and nutmeg until tender (about 5–7 minutes).
- In a large bowl, beat softened cream cheese with granulated sugar until smooth. Add sour cream and eggs one at a time, mixing well after each addition.
- Fold in sautéed apple mixture into the cream cheese batter.
- In another bowl, combine flour, oats, brown sugar, cinnamon, and butter to make the crumble topping.
- Pour half of the cheesecake mixture over the crust, sprinkle half of the crumble topping, add remaining cheesecake mix followed by more crumble on top.
- Bake for 50–60 minutes or until edges are set but center is slightly wobbly. Cool completely before refrigerating for at least four hours.
