- 8 oz block of feta cheese
- 12 oz penne or fusilli pasta
- 2 cups cherry tomatoes
- 1/4 cup fresh basil leaves
- 4 tbsp extra virgin olive oil
- 4 garlic cloves, smashed
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
- Season chicken breasts with salt and pepper, then place them in the baking dish.
- In the same dish, add cherry tomatoes, garlic, and olive oil; toss to coat.
- Place the feta cheese block in the center and drizzle with more olive oil.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and feta is soft.
- Cook pasta according to package instructions; drain and set aside.
- Shred chicken in the baking dish; mix in cooked pasta and fresh basil before serving.
