  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz block of feta cheese
  • 12 oz penne or fusilli pasta
  • 2 cups cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 4 tbsp extra virgin olive oil
  • 4 garlic cloves, smashed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper, then place them in the baking dish.
  3. In the same dish, add cherry tomatoes, garlic, and olive oil; toss to coat.
  4. Place the feta cheese block in the center and drizzle with more olive oil.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and feta is soft.
  6. Cook pasta according to package instructions; drain and set aside.
  7. Shred chicken in the baking dish; mix in cooked pasta and fresh basil before serving.
