Ingredients

  • 3 lbs chuck roast
  • 4 dried guajillo peppers
  • 2 tsp cumin
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 10 corn tortillas
  • 2 cups Oaxacan or mozzarella cheese, shredded
  • Lime wedges for serving

Instructions

  1. Soak guajillo peppers in hot water for about 15 minutes until soft.
  2. In a large pot, sauté chopped onions and minced garlic until golden brown.
  3. Add cubed chuck roast, cumin, bay leaves, and blended guajillo pepper paste; stir well.
  4. Pour in beef broth to cover the meat completely; bring to a simmer and cover. Cook on low heat for about 3 hours until tender.
  5. Shred the meat with two forks.
  6. Warm tortillas on a skillet; fill each with shredded meat and cheese before folding them over.
  7. Serve tacos alongside warm consomé for dipping.
