  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder
  • ½ tsp baking soda

  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil or unsweetened applesauce
  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
  3. In another bowl, mix the eggs, grated zucchini, oil (or applesauce), lemon juice, lemon zest, and vanilla until smooth.
  4. Gradually fold the wet ingredients into the dry mixture until just combined. Gently stir in blueberries and nuts if using.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
  6. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Drizzle with lemon glaze made from powdered sugar and lemon juice.
