Ingredients
Scale
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/2 cup light brown sugar
- 16 oz cream cheese, softened
- 1/2 cup butterscotch sauce (store-bought or homemade)
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- Whipped cream (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper.
- In a bowl, mix the graham cracker crumbs, melted butter, and brown sugar until well combined. Press this mixture firmly into the bottom of your prepared dish to form the crust.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar while mixing, then blend in the butterscotch sauce and vanilla extract until creamy.
- Add eggs one at a time, mixing on low speed until just combined; avoid overmixing.
- Pour the cheesecake filling over the crust and bake for about 25-30 minutes until edges are set but center is still slightly jiggly.
- Allow cooling at room temperature before refrigerating for at least two hours (or overnight) to set.
