  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup full-fat Greek yogurt
  • 2 tbsp fresh oregano, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 medium cucumber, diced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Pita bread (optional)

Instructions

  1. Marinate chicken by mixing lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Coat the chicken and let it sit for at least 30 minutes.
  2. Prepare tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, parsley, salt, and pepper in a bowl. Refrigerate.
  3. Grill or pan-sear the marinated chicken for about 6-7 minutes per side until cooked through (internal temperature of 165°F).
  4. Let the chicken rest before slicing it into bite-sized pieces.
  5. Assemble bowls with fresh greens as the base, add sliced chicken, drizzle with tzatziki sauce, and top with diced cucumbers and parsley.
