  • 2 lbs russet potatoes, peeled and cubed
  • 1 lb sausage (Italian or breakfast)
  • 1 oz ranch dressing mix (powdered)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • 4 green onions, sliced thinly
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large baking dish with olive oil.
  2. In a skillet over medium heat, cook the sausage until browned; set aside.
  3. In a mixing bowl, combine the cooked sausage, cubed potatoes, ranch seasoning, sour cream, shredded cheese, and half of the green onions.
  4. Mix well until potatoes are evenly coated. Transfer to the greased baking dish.
  5. Bake for 30-35 minutes until bubbly and golden brown on top. Garnish with remaining green onions before serving.
