- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp pure vanilla extract
- 2 tbsp unsweetened cocoa powder
Instructions
- Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring well until smooth.
- Spoon melted chocolate into a silicone mold or mini muffin tin to coat the sides evenly. Tap lightly to remove air bubbles.
- Chill molds in the refrigerator for 10-15 minutes until set.
- In a separate bowl, beat the softened cream cheese with sugar and vanilla until smooth. Gradually mix in cocoa powder.
- Remove molds from the fridge and fill each cavity with the cheesecake mixture, smoothing the tops with a spatula.
- If needed, reheat remaining melted chocolate and drizzle over each filled cavity to seal.
- Chill again for about an hour until fully set before gently removing from molds.
