Ingredients

  • 1 cup semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring well until smooth.
  2. Spoon melted chocolate into a silicone mold or mini muffin tin to coat the sides evenly. Tap lightly to remove air bubbles.
  3. Chill molds in the refrigerator for 10-15 minutes until set.
  4. In a separate bowl, beat the softened cream cheese with sugar and vanilla until smooth. Gradually mix in cocoa powder.
  5. Remove molds from the fridge and fill each cavity with the cheesecake mixture, smoothing the tops with a spatula.
  6. If needed, reheat remaining melted chocolate and drizzle over each filled cavity to seal.
  7. Chill again for about an hour until fully set before gently removing from molds.
