  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar (light or dark)
  • 2 large eggs (room temperature)
  • ½ cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9×5-inch loaf pans with nonstick spray or line with parchment paper.
  2. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until creamy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined; lumps are okay.
  6. Gently fold in the grated zucchini and chocolate chips.
  7. Pour the batter into prepared pans and smooth the tops. Bake for 55-65 minutes until a toothpick inserted comes out clean.
  8. Allow cooling in pans for about 10 minutes before transferring to wire racks to cool completely.
