  • 4 medium Russet potatoes (about 2 lbs), thinly sliced
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly grated
  • 4 tablespoons unsalted butter
  • 1 small onion, finely diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Paprika (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Scrub and slice Russet potatoes into 1/4-inch rounds.
  3. In a skillet, melt 2 tablespoons of butter over medium heat and sauté the diced onion until translucent (about 5 minutes).
  4. In a bowl, whisk together heavy cream, garlic powder, salt, pepper, and half of the cheddar cheese.
  5. In a greased baking dish, layer half of the potato slices, pour half of the cream mixture over them, and add sautéed onions.
  6. Repeat layers with remaining potatoes and cream mixture. Top with remaining cheddar cheese.
  7. Cover with foil and bake for 45 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
