- 1 cup heavy cream
- 2 cups sharp cheddar cheese, freshly grated

- 1 small onion, finely diced

Instructions
- Preheat oven to 375°F (190°C).
- Scrub and slice Russet potatoes into 1/4-inch rounds.
- In a skillet, melt 2 tablespoons of butter over medium heat and sauté the diced onion until translucent (about 5 minutes).
- In a bowl, whisk together heavy cream, garlic powder, salt, pepper, and half of the cheddar cheese.
- In a greased baking dish, layer half of the potato slices, pour half of the cream mixture over them, and add sautéed onions.
- Repeat layers with remaining potatoes and cream mixture. Top with remaining cheddar cheese.
- Cover with foil and bake for 45 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
