  • 2 medium tart apples (like Granny Smith or Honeycrisp), chopped

  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter
  • 1/2 cup chopped pecans (or walnuts)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Wash and pierce sweet potatoes with a fork.
  2. Bake sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until tender.
  3. While they bake, mix chopped apples, cranberries, brown sugar, cinnamon, and butter in a bowl.
  4. Once cool, slice open each sweet potato and scoop out most flesh into a bowl.
  5. Combine sweet potato flesh with the cranberry apple mixture until creamy.
  6. Fill potato skins with the mixture, top with pecans, and return to the oven at 350°F (175°C) for another 15-20 minutes.
