  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 cup dried cranberries (preferably juice-soaked)
  • 1/2 cup white chocolate chips
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Zest of one lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, and salt until airy.
  3. In another bowl, cream the softened butter until smooth. Gradually mix in the dry ingredients until just combined.
  4. Gently fold in the cranberries and white chocolate chips using a spatula.
  5. Spread the batter evenly in the prepared pan and bake for 20-25 minutes until lightly golden.
  6. While cooling, prepare the frosting by mixing cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
  7. Once cooled completely, frost generously and cut into squares.
