  • 1 pound flounder fillets
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 2 tablespoons freshly squeezed lemon juice
  • 4 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Oil for frying

Instructions

  1. Pat the flounder fillets dry with paper towels. Set up three bowls: one with flour, one with whisked eggs, and another with panko breadcrumbs mixed with salt.
  2. Coat each flounder fillet in flour, dip in egg, then coat with panko breadcrumbs.
  3. In a large skillet over medium heat, melt butter and add oil until hot.
  4. Cook the coated fillets for about 3-4 minutes on each side until golden brown and crispy.
  5. For the lemon-butter sauce, lower heat after frying fish and sauté minced garlic until fragrant. Stir in lemon juice and remaining butter until melted.
