  • 1 lb sirloin or flank steak
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. Marinate the Steak: In a bowl, mix olive oil, minced garlic, paprika, cumin, lemon juice, salt, and pepper. Add steak strips and marinate for at least 30 minutes.
  2. 2. Sear the Steak: Heat a skillet over medium-high heat. Sear marinated steak strips for 3-4 minutes on each side until browned and cooked to your liking.
  3. 3. Prep Your Veggies: While the steak cooks, chop cucumbers and halve cherry tomatoes. Slice red onions thinly. Toss veggies with olive oil and lemon juice.
  4. 4. Assemble Your Bowls: Place a scoop of cooked quinoa or rice in serving bowls as a base layer. Top with seared steak and veggies. Sprinkle crumbled feta over everything.
