  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Honey Bun Topping (optional): 1/2 cup brown sugar + 1 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  3. In another bowl, mix flour, baking powder, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour half the batter into the prepared pan and sprinkle with half of the honey bun topping. Add remaining batter and top with more honey bun mixture.
  6. Bake for 30–35 minutes or until a toothpick comes out clean.
