  • 1 cup fresh spinach (optional), chopped

Instructions

  4. Slice chicken breasts horizontally to create pockets without cutting through.
  5. Fill each pocket with the mushroom mixture and secure with toothpicks if needed.
  6. Place stuffed chicken in the baking dish, sprinkle remaining Parmesan on top, and bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
