- 8 oz fresh cremini or button mushrooms, chopped
- 4 cloves garlic, minced
- 4 tbsp unsalted butter, divided
- 2 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, melt 2 tbsp butter over medium heat. Sauté garlic until fragrant (30 seconds), add mushrooms, and cook until tender (5 minutes).
- Stir in Italian seasoning, salt, pepper, and parsley; remove from heat.
- Pound chicken breasts between plastic wrap to about half an inch thick.
- Spoon mushroom mixture onto one side of each chicken breast and fold over.
- In the same skillet, heat olive oil over medium-high heat and sear stuffed chicken seam-side down for 3-4 minutes until golden brown; flip and sear the other side.
- Transfer to the oven and bake for 20-25 minutes until internal temperature reaches 165°F. Allow to rest before slicing.
