  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 8 oz fresh cremini or button mushrooms, chopped
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter, divided
  • 2 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet, melt 2 tbsp butter over medium heat. Sauté garlic until fragrant (30 seconds), add mushrooms, and cook until tender (5 minutes).
  3. Stir in Italian seasoning, salt, pepper, and parsley; remove from heat.
  4. Pound chicken breasts between plastic wrap to about half an inch thick.
  5. Spoon mushroom mixture onto one side of each chicken breast and fold over.
  6. In the same skillet, heat olive oil over medium-high heat and sear stuffed chicken seam-side down for 3-4 minutes until golden brown; flip and sear the other side.
  7. Transfer to the oven and bake for 20-25 minutes until internal temperature reaches 165°F. Allow to rest before slicing.
