  • 1 lb ground chicken
  • 2 tbsp fresh oregano, chopped
  • 3 garlic cloves, minced
  • Zest of 1 lemon
  • 1 cup orzo pasta
  • ½ cup crumbled feta cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine ground chicken, oregano, garlic, lemon zest, salt, and pepper. Mix until well combined.
  2. Wet your hands and form small meatballs (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides, about 5-7 minutes.
  4. Meanwhile, boil salted water in another pot and cook orzo according to package instructions (about 8-10 minutes) until al dente.
  5. Drain the orzo and return it to the pot. Add lemon juice, zest, feta cheese, salt, and pepper while warm.
  6. Gently toss in the cooked meatballs with the lemon orzo. Serve warm with extra feta if desired.
