- 1 lb ground chicken
- 2 tbsp fresh oregano, chopped
- 3 garlic cloves, minced
- Zest of 1 lemon
- 1 cup orzo pasta
- ½ cup crumbled feta cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- In a large bowl, combine ground chicken, oregano, garlic, lemon zest, salt, and pepper. Mix until well combined.
- Wet your hands and form small meatballs (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides, about 5-7 minutes.
- Meanwhile, boil salted water in another pot and cook orzo according to package instructions (about 8-10 minutes) until al dente.
- Drain the orzo and return it to the pot. Add lemon juice, zest, feta cheese, salt, and pepper while warm.
- Gently toss in the cooked meatballs with the lemon orzo. Serve warm with extra feta if desired.
