  • 1 lb boneless, skinless chicken breasts
  • 2 large fresh lemons (juiced and zested)
  • 4 garlic cloves (minced)
  • 2 tsp dried oregano
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • ½ cucumber (grated)
  • 2 tbsp fresh dill or mint (chopped)
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Cut chicken breasts into cubes and marinate in the mixture for at least 30 minutes.
  3. Soak wooden skewers in water for 15 minutes if using; otherwise, proceed with metal skewers.
  4. Thread marinated chicken onto skewers evenly.
  5. Preheat grill to medium-high heat and cook skewers for 10-15 minutes until golden brown and fully cooked.
  6. Meanwhile, mix Greek yogurt, grated cucumber, dill or mint, lemon juice, garlic powder, salt, and pepper in a bowl to make the tzatziki sauce. Chill until serving.
