  • 1 cup black-eyed peas (soaked overnight)
  • 1 smoked ham hock (or 1 cup diced ham)
  • 1 cup long-grain rice
  • 1 medium sweet onion (chopped)
  • 3 garlic cloves (minced)
  • 4 cups low-sodium chicken broth
  • 1 green bell pepper (chopped)
  • 1/4 tsp cayenne pepper
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Soak black-eyed peas overnight, then drain and rinse.
  2. In a large pot over medium heat, add olive oil and sauté chopped onion and bell pepper until softened (about 5 minutes).
  3. Stir in minced garlic, thyme, cayenne pepper, salt, and pepper; cook for another minute.
  4. Add soaked black-eyed peas and the smoked ham hock to the pot. Pour in chicken broth until submerged. Bring to a boil, then reduce heat to simmer.
  5. Cover and simmer for 45 minutes to an hour until peas are tender.
  6. Stir in long-grain rice and cook for an additional 20 minutes until rice is done. Remove the ham hock, shred meat off bones if desired, and return shredded meat to the soup.
