  • 1 lb Italian sausage (mix of sweet and spicy)
  • 4 cups fresh baby spinach
  • 2 medium carrots (sliced thinly)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 6 cups low-sodium chicken broth
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions

  1. In a large bowl, combine ground beef, Italian sausage, breadcrumbs, egg, garlic powder, parsley, salt, and pepper. Form into small meatballs (about one inch in diameter).
  2. Heat olive oil in a large pot over medium heat. Sauté diced onions and minced garlic until golden brown (3-4 minutes).
  3. Add sliced carrots to the pot and cook for another 2-3 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Gently drop meatballs into the boiling broth. Cook for 15-20 minutes until meatballs are cooked through.
  6. Stir in fresh spinach until wilted (1-2 minutes). Adjust seasoning if necessary.
  7. Serve hot with grated Parmesan cheese on top.
